OIT Cookbook Recipe: The Best Banana Bread

The recipe was submitted to us by Antoinette “AJ” Johnson, Director of ICPG’s Division of Investment Oversight and Governance.

“I enjoy this banana bread with my Mom in the mornings, with a hot cup of coffee,” Dehn says. “Delicious!”

The Best Banana Bread

Breakfast

Cook time: 55-65 minutes

Prep time: 15 minutes

Servings: 8

Ingredients:

  • 3-4 ripe, medium-sized bananas, peeled
  • 1/3 cup butter, melted and cooled to room temperature
  • 1/2 tsp. baking soda
  • 1 pinch salt
  • 1/2 cup sugar
  • 1 large egg, lightly beaten
  • 1 tsp. vanilla extract
  • 1 1/2 cups all-purpose flour

Directions:

  1. Preheat oven to 350 degrees.
  2. Butter an 8x4” loaf pan and set aside.
  3. In large mixing bowl, mash ripened bananas with a fork.
  4. Stir in melted butter.
  5. Stir in the remaining ingredients.
  6. Pour batter into buttered pan.
  7. Bake 55-65 minutes at 350 degrees, until toothpick or wooden skewer comes out clean.
  8. If needed, tent the loaf with foil and continue baking until toothpick or wooden skewer comes out clean.
  9. Remove from oven, allow to rest for 10 minutes before removing the loaf to a cooling rack. Best served still slightly warm.
