OIT Cookbook Recipe: Blackstrap Gingerbread

Blackstrap Gingerbread

What significance does this recipe have for you? Typically a sweet German treat, the use of blackstrap molasses, black peppercorn, and generous helping of ginger give this cookie recipe a bolder, spicier bite than is normally expected. My family tradition is to make a gingerbread house during the winter holiday months, and many cookies as well! After the holidays have passed, we put the house outside for critters to enjoy.
Cook time: 14 minutes
Prep time: 1 hour
Servings: About 30 cookies
Ingredients:
- 245 g blackstrap molasses
- 3/4 lb soft unsalted butter
- 225 g sugar
- 2 eggs
- 1015 g bread flour
- 65 g fall spices (25 g cinnamon, 8 g each of allspice, cloves, nutmeg, cardamom)
- 8 g salt
- 8 g black pepper
- 2/3 cup milk
Directions
- Cream molasses, butter, and sugar.
- Add eggs and mix thoroughly.
- Add all dry ingredients and mix thoroughly.
- Add milk and mix thoroughly.
- Pour onto floured surface and roll to 1/4" thick.
- Cut shapes and place on a sheet pan with parchment paper. Leave some room for minor spread.
- Bake at 350°F for 10-14 min or until done, timing will vary based on cookie sizes.
- Finish with vanilla flat icing (powdered sugar, milk, vanilla extract).
